Eggplant is a delicious and underrated vegetable that you can dice up into cubes and add to a stir fry, make into eggplant “fries” or make into a savory dip! This healthy baba ganoush recipe is decadent, tangy, and slightly sweet. If you have never tried baba ganoush now might be the time to whip up this dish and see what you’ve been missing out on. Baba Ganoush (Eggplant Dip)


  • 2 medium eggplant
  • 1 TBS tahini
  • 1 tsp cumin seeds
  • 1 garlic clove, finely minced
  • 1 lemon juiced
  • 1 TBS sour cream
  • salt and pepper to taste
  • olive oil (for roasting)
  • optional: 1 TBS fresh cilantro, parsley, mint, or basil, chopped


  1. Preheat oven to high broil, position rack at the top
  2. Line baking sheet with foil and place washed eggplant that has been cut into 1/4 inch rounds on sheet (or add rounds to a glass dish and cover with lid)
  3. Drizzle eggplant with olive oil and a pinch of salt
  4. Roast until the flesh is tender (5-10 minutes)
  5. Turn over once, make sure the flesh is golden brown
  6. Remove from oven and carefully wrap the rounds in foil from the pan, or cover and let sit for 5 minutes
  7. Peel away the skin of the eggplant, add flesh to a blender or food processor and puree with the rest of the ingredients
  8. Taste and adjust seasoning as needed
  9. Garnish with caramelized onions, sautéed eggplant and feta if desired
